One Minute Monday Morning Breakfast Sandwich!

Do you have a case of the Mondays? This one minute breakfast sandwich might help.

When I was in high school, I used to carpool with a friend whose mom made her a homemade“Egg McMuffin” breakfast sandwich. I was so jealous as she ate that in the car on the way to school.

Well, I am jealous no longer as I recently learned a way to make a delicious breakfast sandwich using one cup and these ingredients- so no frying pan to clean!

Here’s how to do it. Crack an egg into a coffee mug...

and use a fork to whisk the yolk and white together just like for scrambled eggs. Put it in the microwave for 30 seconds.While the egg is cooking, put your English muffin in the toaster.

BEEEP. Your egg is only half-done. Don’t eat it yet...

instead add salt and pepper and crumble some cheddar cheese on top. You can use a grater but I am even lazier on a weekday so I break apart a slice. Back in the microwave for 15- 30 seconds- watch as it can expand over the mug if it goes too long.

BOIINNG! Your English muffin should be done and in a few seconds, your egg too.

The cheese should look nice and melty like this!

I flip it onto a toasted muffin and add salt and pepper to the other side. I press it down, wrap it in a napkin, and it’s ready to go!

So, if you are watching your cholesterol, calories etc, you can use egg whites or Egg Beaters as well as a lower fat cheese. My neighbor uses Laughing Cow. But if you aren’t, a good cage free egg tastes marvelous with some sharp cheddar. Would love to hear if you have a favorite combination!

I've always wondered what the microwaved egg tasted like. I have been pretty scared to try it because I love eggs but get grossed out if they're goopy in any way. How solid is the egg after it has been microwaved? -- Lori

It's actually very fully and evenly cooked! I found the 30 sec and then another 30 sec to be just right. Your microwave may vary but just pop it back in for a few more seconds if it needs a little more.
I also don't like runny, goopy eggs. The cheese is the melty part.

You should totally try this. I am so addicted and I think you could get really creative with other cheeses. I have some goat cheese waiting to be used in this fashion.

I used to do this all the time, but I sort of forgot about it. You can also not scramble the egg and make it like the McDonald's egg for a different spin. Sometimes I'd even get crazy and all some precooked bacon to it. YUM. :)

Oooh I have to try it without the scramble, B! Justin would like that. I like the bacon idea and wonder if proscuitto or diced pancetta could be good too. And Mark, I bet Michelle would like this :) It's very good to take on the go when you are running out the door. Ok, I confess I love homemade mcmuffins. I should work on the ultimate weekend version too.

Neat idea. You totally need meat for this though (quoth the carnivore). For the cholesterol conscious, there are good turkey bacons out there (including precooked).
